Delgado Finds His Passion In The Kitchen

WARSAW — Jorge Delgado has been cooking for as long as he can remember.
“Ever since I could work, I was working in the kitchen,” Delgado explained.
He found passion in the kitchen helping his mom make meals and he has been feeding that passion ever since. He has worked in the restaurant business for over a decade, learning everything he can to improve his skills and recipes.
“Something small can make a big difference in making okay food and making some amazing food,” Delgado explained.
Delgado is a self-taught chef but admits he has had a lot of help getting to where he is.
When asked who inspires or influences his cooking, Delgado responded, without missing a beat, “my mom.”
“Growing up, she and I always made the good homemade food. It made our whole family happy to see all the good food she would make for us,” Delgado explained. “So that is what I want to bring to people, to make them feel good by eating amazing food.”
Most of Delgado’s favorite memories in the kitchen include his mom.
“I remember prepping stuff for my mom when she was going to cook something, even though she would tell me it would have been a little better if I did it like this next time,” he explained. “It helped me grow and to pay attention to details.”
Cooking is all about the details. The smallest detail can ruin the best meal. The most important ingredient? Love. Delgado learned this from his mother’s cooking.
“Cooking is a way to express yourself. Food takes time to prepare and you can tell when it is rushed and no love is put in to what was created,” Delgado explained.
However, sometimes, there is not enough love in the world to save a dish.
“Cooking is a time to be creative,” Delgado mentioned. “I love trying new seasonings and ingredients I have never heard of or tried. Sometimes you invent something that tastes good and sometimes you do not.”
Recently, Delgado invested his knowledge, skills and passion into opening a food truck, Taqueria Delgados LLC. Delgado cooks with his mother once more as he hired his family to work with him. The truck is stationed at 1506 N. Detroit St., Warsaw.
“For now, my future plans are perfecting the food truck and being able to add more menu options,” Delgado explained. “Then eventually, I might look into another food truck or start going out and doing fairs and festivals.”

When Delgado is not in the kitchen— he is renting them — and the rest of the house. Delgado owns a real estate business, which rents out houses. He hopes to be able to grow his real estate portfolio in the future.
But for now, Delgado is pouring his passion and talent into his new food truck and putting good food into people’s bellies.
